3 c sifted flour
1/2 tsp baking powder
1/2 tsp soda
1 c butter or margarine (Grandma preferred margarine as it makes a softer cookie)
2 eggs
1 c sugar
1/2 tsp vanilla
- Sift flour, soda, and baking powder. Cut in softened butter until mixture looks like corn meal (like you do for a pie crust).
- In a separate bowl, beat eggs then add sugar and beat well. Stir in vanilla. Combine with flour/butter mixture.
- Shape into a ball, cover with plastic wrap, and chill well (Grandma frequently would let it sit overnight).
- Roll out 1/8" thick on lightly floured board. Cut with cookie cutters of various shapes, using a spatula to lift cut cookies onto a greased cookie sheet.
- If you like, you can decorate before baking with chopped nuts, chocolate chips, colored sugar, dried fruit, or decorating candies.
- Bake at 375 degrees for 6 to 8 minutes or until the edges just start to brown.
- Cool on wire rack before decorating with frosting.
Makes about 6 dozen.
